Coconut cherry apple crumble: a unique twist with juicy tart cherries.
Ingredients:
  • 6 large Granny Smith apples, peeled, cored, coarsely chopped
  • 40.00 gm caster sugar
  • 2.50 gm ground cinnamon
  • 680g jar morello cherries, drained reserving liquid
  • 10.00 gm cornflour
  • 100g butter, chopped
  • 150g plain flour
  • 110g brown sugar
  • 45g rolled oats
  • 40g shredded coconut
  • 53.60 gm golden syrup
  • Coles Irresistible Vanilla Bean ice cream, to serve
Instructions:
  • Preheat your oven to 180°C. In a large saucepan over medium-high heat, combine apple, caster sugar, cinnamon, and 1/4 cup (60ml) of the reserved cherry liquid. Cook, stirring occasionally, for 10 minutes or until the apple begins to soften.
  • In a small bowl, combine the cornflour with 2 tablespoons of the cherry liquid. Stir well. Pour in the rest of the cherry liquid and stir to combine. Add this mixture to the apple mixture along with the cherries. Cook and stir for 5 minutes until the sauce boils and thickens. Divide the mixture among six 1 1/4-cup (310ml) ovenproof dishes or use an 8-cup/2L ovenproof dish if preferred.
  • In a large bowl, combine butter, flour, brown sugar, oats, and coconut. Use your fingertips to blend the butter into the dry ingredients until it forms a crumbly texture. Add the golden syrup and mix well. Spread the mixture over the apples evenly.
  • Bake until golden brown on top for 25-30 minutes. Enjoy warm or at room temperature with a scoop of ice cream.
