Gaytime apple crumble recipe

Indulgent Aussie apple dessert with hidden Golden Gaytime ice-creams in crumbly topping, topped with irresistible custard.
Ingredients:
  • 4 apples, peeled, cored, quartered, thinly sliced
  • 55g (1/4 cup) caster sugar
  • 1/2 lemon, juiced
  • 150g (1 cup) plain flour
  • 70g (1/3 cup, firmly packed) brown sugar
  • 50g (1/2 cup) rolled oats
  • 64.80 gm Saunders’ Malt Extract powder
  • 70g chilled butter, chopped
  • 4 Streets Golden Gaytime ice-cream bars
Instructions:
  • Preheat oven to 200C (180C fan-forced).
  • Slice the apple thinly and layer in a 2L (8 cup) baking dish. Sprinkle with caster sugar and drizzle lemon juice over. Gently mix until well combined.
  • In a bowl, combine flour, brown sugar, oats, and malt. Use your fingertips to rub butter into the mixture until it resembles coarse crumbs. Discard the packets and sticks from 2 ice-cream bars, then rub the ice-cream into the flour mixture.
  • Spread the flour mixture evenly over the apples. Bake until the apples are tender and the top is golden brown, about 25-30 minutes.
  • Place the remaining ice creams, still in their packets, in a large jug. Pour boiling water over them, then let them sit for 1 minute until they soften. Gently massage the packets with your fingertips until the ice cream is melted and well combined.
  • Divide crumble into serving bowls. Cut the top off the ice-cream packets and pour the melted ice-cream over the crumble (remove sticks). Serve.
