Golden Gaytime banana bread: A delicious twist on a classic Aussie treat, infused with toffee, vanilla, chocolate, banana, and biscuit flavors.
Ingredients:
  • 4 Golden Gaytime ice-creams
  • 3 large overripe bananas, well mashed
  • 2 eggs, lightly whisked
  • 300g (2 cups) self-raising flour, sifted
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line an 11 x 21cm loaf pan with baking paper, leaving the two long sides to overhang for easy removal.
  • Prepare a tray with baking paper. Gently remove the outer coating from the Gaytimes using a small sharp knife, keeping the pieces as large as possible. Place the coating on the tray in the freezer. In a large bowl, combine the ice-cream with any remaining coating and mash with a wooden spoon to soften.
  • Combine the banana and egg with the ice cream until well mixed. Gently fold in the flour. Pour the mixture into the pan and bake for 40 minutes, or until a skewer comes out clean when inserted into the center. Allow it to cool for 10 minutes before serving.
  • While the bread is still warm, gently place the Gaytime coating pieces on top, allowing them to melt and drizzle slightly. Let it cool for 10 minutes, then use the paper to transfer it to a wire rack. Remove the paper from underneath the bread and let it cool completely. Finally, slice and serve.
