Gaytime martini recipe

Indulgent cocktail blending melted Golden Gaytime ice-cream with Baileys, butterscotch schnapps, vodka, and caramel sauce. Garnished with crushed Malt 'O' Milk biscuits and Gaytime bites.
Ingredients:
  • 160ml (2/3 cup) thickened cream
  • 1 Streets Golden Gaytime ice-cream, softened slightly, sticks removed
  • 40.00 ml caramel sauce
  • 4 Malt 'O' Milk biscuits, finely crushed
  • 60ml (1/4 cup) Original Irish Cream
  • 40.00 ml butterscotch schnapps
  • 40.00 ml vodka
  • 8 ice cubes
Instructions:
  • Combine thickened cream and ice-cream in a saucepan over medium-low heat, stirring until smooth. Chill in the fridge for 15 minutes in a jug.
  • Next, divide the caramel sauce and biscuits in two equal portions. Coat the rim of each martini glass with caramel sauce, followed by the biscuit crumbs. Chill the glasses in the refrigerator for 10 minutes to firm up. Set aside the remaining biscuit for later use.
  • Combine Baileys, schnapps, vodka, and remaining caramel sauce in a small jug. Stir until thoroughly mixed, then evenly distribute the mixture among the prepared glasses.
  • Add the ice to a cocktail shaker, pour in the ice-cream mixture, and shake vigorously until frothy.
  • Pour the ice-cream mixture over the martini mixture in the glasses. Sprinkle with crushed biscuit and add the Gaytime Bites skewers on top. Serve right away.
