A decadent twist on classic Lamingtons combining Gaytime ice cream and Caramilk chocolate for a quick and indulgent treat.
Ingredients:
  • 50ml thickened cream
  • 1 x 78g Golden Gaytime ice-cream, broken into chunks, stick discarded
  • 100g Caramilk chocolate, chopped
  • 40.00 ml malt powder
  • 450g double unfilled rectangle sponge cakes
  • 2 x 175g pkt Tee Vee Snacks, crushed
  • 260g Caramilk chocolate, chopped
  • 150ml thickened cream
  • 33.60 gm coconut oil
Instructions:
  • Combine cream and ice-cream in a saucepan over medium heat until simmering. Pour over Caramilk in a bowl. Let sit for 3 minutes, then stir until smooth. Mix in malt powder. Chill in the fridge for 2 hours before serving.
  • For the luscious Caramilk coating, combine all ingredients in a microwave-safe jug. Heat in 30-second intervals, stirring each time, until the mixture is melted and velvety. Keep aside for later use, saving ¼ cup for serving if preferred.
  • Whip the chilled Gaytime cream with electric beaters until soft peaks form. Spread it over one sponge cake and top with the second cake. Refrigerate for 2 hours or until cold and firm.
  • Prepare a baking tray with parchment paper. Crush the biscuits and place them in a shallow bowl. Use a serrated knife to cut the sandwiched sponge into 15 pieces using a sawing motion.
  • Using a fork, gently pierce and pick up 1 sponge piece. Hold it over the bowl of Caramilk coating and spoon the mixture evenly over the sponge to coat, letting the excess drip into the bowl. If the coating is too thick, warm it for 30 seconds in the microwave. Then, hold the coated sponge piece over the bowl of crushed biscuits and sprinkle to coat, pressing gently to secure the crumbs. Transfer to the prepared tray. Repeat the process with the remaining sponge pieces, Caramilk, and biscuits. Chill in the fridge until set. Serve with a drizzle of reserved warmed Caramilk coating, if desired.
