Gaytime truffles recipe

Create a simple and irresistible dessert by combining Golden Gaytime ice cream with Caramilk chocolate.
Ingredients:
  • 360g white chocolate, chopped
  • 90g Caramilk chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1 x 78g Golden Gaytime ice cream, stick discarded, chopped
  • 35g (1/4 cup) malted milk drink powder
  • 200g malt biscuits (see note)
  • 400g dark chocolate, chopped
Instructions:
  • Combine the white chocolate and Caramilk in a heatproof bowl.
  • In a small saucepan over medium-high heat, combine the cream and ice cream. Heat and stir for 5 minutes until just coming to a boil. Remove from heat and stir in 1 tablespoon of malt powder until smooth.
  • Pour the creamy mixture over the chocolate, allowing it to rest for 5 minutes. Stir until smooth and well combined, then refrigerate for 1.5 to 2 hours until nicely firm.
  • Prepare a tray lined with baking paper. Roll 2 teaspoonfuls of the chocolate mixture into a ball and place it on the tray. Repeat with the remaining chocolate mixture. Chill in the fridge for 1 hour or until firm.
  • Process the biscuits in a food processor until they turn into fine crumbs, then transfer them to a shallow dish and mix in the rest of the malt powder.
  • Melt the dark chocolate in a heatproof bowl over simmering water, stirring with a metal spoon until smooth.
  • Prepare a tray with baking paper. Dip each truffle in melted chocolate using a fork or truffle dipper, tapping off excess chocolate. Roll in biscuit crumbs and place on the tray. Chill for 10 minutes before serving.
