Apple and custard crumble

Indulge in apple crumble with rich, luscious homemade custard.
Ingredients:
  • 257.50 gm milk
  • 4.40 gm vanilla extract
  • 25.00 gm vanilla custard powder
  • 107.50 gm caster sugar
  • 800g can pie apple
  • 250.00 ml plain flour
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 100g butter, softened
  • Double thick cream, to serve
Instructions:
  • Preheat oven to 180°C. In a saucepan, bring milk and vanilla to a boil over medium heat.
  • Whisk together 1 1/2 tablespoons custard powder, 2 tablespoons caster sugar, and 2 tablespoons cold water until smooth. Gradually pour in the hot milk mixture, stirring constantly. Return the mixture to the saucepan.
  • Whisk the custard over medium heat until it boils. Lower the heat and stir for 3 minutes until slightly reduced to eliminate the raw custard powder flavor.
  • Divide the apple mixture among six 1-cup dishes or one 6-cup baking dish. Pour the warm custard over the top.
  • In a bowl, mix together flour, cinnamon, nutmeg, custard powder, and sugar. Add butter and use your fingertips to rub it into the dry ingredients until the mixture looks like coarse breadcrumbs. Sprinkle the crumble over the custard. Bake on a tray for 30 minutes until golden. Serve warm with cream.
