Crispy air fryer apple spring rolls with custard for dipping - a delicious hack for a quick and easy dessert that tastes just like apple crumble!
Ingredients:
  • 240g (1 cup) apple slices pie fruit
  • 45g (1/4 cup) sultanas
  • 1.25 gm ground cinnamon
  • 6 frozen spring roll wrappers, thawed
  • 120g (1/2 cup) bought thick vanilla custard, plus extra, to serve
  • 3 Digestives The Original biscuits, finely chopped
  • 25g (1/4 cup) rolled oats
  • Cinnamon sugar, to serve
Instructions:
  • Mix together fresh, juicy apples, plump sultanas, and fragrant cinnamon in a medium bowl.
  • Lay a spring roll wrapper on a clean work surface with a corner facing you. Add one-sixth of the apple mixture just below the center of the wrapper. Brush the entire wrapper with custard. Fold in the sides, then roll up to seal the filling. Repeat this process to make a total of 6 rolls. Finish by brushing all rolls with the remaining custard.
  • On a plate, combine biscuits and oats, stirring until mixed. Individually coat each roll in the oat mixture.
  • Coat the air fryer basket with oil, then add rolls and spray with oil. Air fry at 200C for 6-7 minutes until golden and crisp. Serve on a plate.
  • Coat rolls generously with cinnamon sugar and present with additional custard on the side.
