Apple and cranberry crumble slice

Elevate a classic bake-sale treat with fresh apples and tangy cranberries!
Ingredients:
  • 312.50 ml plain flour
  • 75.00 gm self-raising flour
  • 53.75 gm caster sugar
  • 2.50 gm ground cinnamon
  • 125g macadamia spread
  • 40.00 gm chilled water
  • 25.00 gm rolled oats
  • Warmed light pouring custard, to serve
  • 400g can pie apples
  • 82.50 ml dried cranberries
  • 10.00 gm caster sugar
  • 1.25 gm ground cinnamon
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 16cm x 26cm slice pan, and line it with baking paper, leaving a 2cm overhang at the long ends.
  • In a food processor, combine the flours, sugar, and cinnamon, then add the spread until the mixture resembles fine breadcrumbs. Pour in chilled water and process until the dough just forms. Transfer the dough to a flat surface and knead until smooth. Press two-thirds of the dough into the pan, then prick with a fork. Chill in the refrigerator for 30 minutes. Roll the remaining dough into a 12cm-long log and freeze.
  • Bake the base until golden, about 20-25 minutes. Allow it to cool for 15 minutes before using.
  • Prepare the filling by mixing apples, cranberries, sugar, and cinnamon in a bowl. Spread this mixture over the base. Grate the remaining dough into another bowl and mix it with oats. Sprinkle this mixture over the apple filling. Bake for 30 minutes until golden. Slice and serve with custard.
