No-fuss rhubarb and apple crumble

Indulge in a comforting and decadent one-pan treat.
Ingredients:
  • 350g rhubarb
  • 3 large granny smith apples, peeled, cored, cut into eighths
  • 53.75 gm caster sugar
  • 49.50 gm self-raising flour
  • 62.50 ml plain flour
  • 2.50 gm ground ginger
  • 100g butter, chilled, chopped
  • 50.00 gm rolled oats
  • 90.00 gm brown sugar
  • 240.00 gm Vanilla Custard
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and grease a 6-cup ovenproof dish.
  • In a prepared dish, mix rhubarb, apple, caster sugar, and 2 tablespoons of cold water. Cover with foil and bake for 20-25 minutes, or until the fruit is just tender.
  • Sift flours and ground ginger into a bowl, then mix in butter with your fingertips until it looks like breadcrumbs. Add oats and brown sugar, then remove foil from fruit. Sprinkle the crumble mixture over the fruit and bake until golden, about 20-25 minutes. Serve with custard.
