No-fuss chicken goulash

Make quick and delicious chicken goulash in just 40 minutes.
Ingredients:
  • 6 chicken thigh fillets, chopped
  • 1 brown onion, halved, thickly sliced
  • 250g button mushrooms, halved
  • 1 red capsicum, chopped
  • 10.00 gm sweet paprika
  • 19.20 gm no-added salt tomato paste
  • 400g can cherry tomatoes in juice
  • 300g fettuccine
  • 37.60 gm light sour cream
  • 40.00 ml chopped fresh chives
Instructions:
  • In a large saucepan over medium-high heat, heat 2 teaspoons of oil. Saute the chicken, stirring occasionally, for 2 to 3 minutes until golden brown. Remove the chicken and set aside in a bowl.
  • Lower the heat to medium and warm the rest of the oil in the pan. Toss in the onion, mushrooms, bell peppers, garlic, and paprika. Sauté for 5 minutes until mushrooms are soft. Stir in tomato paste, cherry tomatoes, and 1 cup of cold water. Crank up the heat to high and bring it to a boil. Put the chicken back into the pan. Decrease the heat to medium-low. Let it cook, covered, for 20 minutes until the chicken is fully cooked and the sauce has slightly thickened. Season with pepper to taste.
  • Cook the pasta in a large saucepan of boiling water according to the instructions on the packet until tender, then drain.
  • Transfer the pasta and goulash into individual serving bowls. Drizzle with sour cream and garnish with a sprinkle of chives before serving.
