Elegant and versatile, ideal for any occasion from brunch to cocktail parties.
Ingredients:
  • 1 cup unsalted butter
  • 1.75 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 cups sliced almonds
Instructions:
  • Preheat your oven to 325°F (175°C) for a perfectly baked dish.
  • In a medium bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mix until smooth. Combine flour and salt, gently fold into butter mixture until blended.
  • Split the batter into two equal portions and place each half in the center of two ungreased, flat cookie sheets. Use a spatula dipped in warm water to evenly spread the batter across the entire sheet, ensuring it is evenly distributed. Sprinkle almonds on top and gently press them into the dough.
  • Bake each sheet for about 12 minutes, or until edges turn lightly brown. Cut the hot cookies into 2-inch squares. Return them to the oven and bake until lightly golden, about 5 minutes. Keep a close eye to avoid over baking.
  • Transfer the cookies to a cooling rack to cool completely. Once cooled, store the cookies in airtight containers with waxed paper between layers.
