Fresh Bing cherries, zesty lemon, and a touch of almond elevate this classic cherry pie recipe for a sweet twist on the traditional sour cherry pie.
Ingredients:
  • 1 (15 ounce) package double crust ready-to-use pie crust
  • 4 cups Bing cherries, pitted and sliced
  • 1 cup white sugar
  • 0.25 cup instant tapioca
  • 0.25 teaspoon almond extract
  • 1 tablespoon unsalted butter
Instructions:
  • Preheat your oven to 400°F (200°C), then gently press the bottom pie crust into a pie pan.
  • In a bowl, mix cherries, sugar, tapioca, lemon juice, and almond extract. Chill until filling starts to set, approximately 10 minutes. Stir once more, then chill for an additional 10 minutes to let the flavors blend.
  • First, gracefully pour the tantalizing filling into the awaiting bottom half of the pie crust. Next, delicately place the top crust over the filling, sealing it with a decorative crimp along the edges. Enhance the flavor by dotting with butter and creating stylish vents on top using a sharp knife.
  • Bake in the preheated oven for 30 minutes, then rotate the pie 1/4 of a turn and bake for an additional 20 minutes until the crust is golden brown.
