French comfort food classic Chicken Provencal with lemons, white wine, tomatoes, capers, and olives.
Ingredients:
  • 7-8 bone-in, skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Herbes de Provence
  • 4 large shallots, quartered
  • 6 cloves garlic, peeled
  • 1 pint cherry tomatoes
  • 1/2 cup green olives, like Castelvetrano
  • 1 lemon, cut into eighths
  • 1 tablespoon capers
  • 4 sprigs thyme
  • 1 cup white wine, like Chardonnay
  • Rice or baguette, for serving
Instructions:
  • Preheat the oven to a toasty 400°F.
  • Season the chicken thighs thoroughly with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-low heat. Place the chicken thighs in the skillet, skin side down. Allow them to cook undisturbed for 8-10 minutes until the skin turns golden brown and starts to render its fat. Meanwhile, proceed with preparing the remaining ingredients.
  • Flip the chicken thighs after browning on one side. Use a thin spatula to loosen the skin. Sprinkle with Herbs de Provence, shallots, garlic, cherry tomatoes, green olives, lemon wedges, capers, and thyme sprigs. Pour white wine around the chicken in the skillet.
  • Place skillet in the oven and cook the chicken uncovered for 1 hour, until opaque all the way through and the thighs reach at least 165°F in the middle.
  • Take the braise out of the oven and allow it to cool for five minutes. Serve it over rice or with a crusty baguette.
