Fluffy almond mousse with colorful cherries and almonds. Make ahead for enhanced flavor. Store in freezer.
Ingredients:
  • 1 egg white
  • 0.25 cup confectioners' sugar
  • 1 cup heavy cream
  • 1 teaspoon sherry wine or Marsala
  • 1 teaspoon almond extract
  • 1 cup almond macaroon crumbs
  • 0.5 cup ground almonds
  • 6 red maraschino cherries, chopped
  • 6 green maraschino cherries, chopped
  • 0.25 cup slivered almonds
  • 4 maraschino cherries, halved for garnish
Instructions:
  • In a small bowl, whisk egg white vigorously until it becomes frothy. Slowly incorporate sugar into the mixture while continuing to whisk until it forms a thick and glossy texture. Set aside for later use.
  • In a large bowl, whip cream until fluffy. Slowly fold in sherry, almond extract, macaroon crumbs, ground almonds, and chopped red and green cherries. Gently incorporate egg white into the cream mixture.
  • Divide the mixture evenly among 8 paper baking cups in a medium muffin tray. Top with slivered almonds. Seal the tray with clear plastic wrap followed by aluminum foil. Freeze overnight.
  • Serve at room temperature after allowing it to rest for 5 minutes, then finish by decorating with maraschino cherry halves.
