Delicious almond chia bars with peanut butter powder and chocolate chips - perfect for busy mornings or quick bites!
Ingredients:
  • 4 cups water, divided
  • 2 cups chopped almonds
  • 1 pinch salt
  • cooking spray
  • 3 cups all-purpose flour
  • 0.66666668653488 cup chocolate chips
  • 0.66666668653488 cup olive oil
  • 0.66666668653488 cup chia seeds
  • 0.5 cup honey
  • 0.5 cup powdered peanut butter (such as PB2®)
  • 1 tablespoon ground cinnamon
  • 2 teaspoons vanilla extract
Instructions:
  • In a bowl, soak almonds with 2 cups of water and a pinch of salt. Allow to sit for 8 hours or overnight. Rinse almonds twice before using.
  • In a blender, combine drained almonds and 2 cups of water until smooth, approximately 2 minutes. Pour the mixture into a large bowl.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously spray an 11x15-inch baking dish with cooking spray.
  • Combine flour, chocolate chips, olive oil, chia seeds, honey, powdered peanut butter, cinnamon, vanilla extract, and 2 teaspoons salt with the almond mixture until evenly mixed. Spread the dough into the baking dish and smooth it out using a fork or spatula.
  • Bake in the preheated oven for 30-40 minutes until golden brown. Let it cool for 10 minutes before slicing into bars.
