Overnight chia banana oatmeal in almond milk - a delicious and energizing vegan breakfast, served hot or cold.
Ingredients:
  • 1.3333333730698 cups almond milk
  • 2 ripe bananas, mashed
  • 1.25 cups rolled oats
  • 0.75 cup water
  • 4 tablespoons chia seeds
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup fresh blueberries
  • 0.25 cup fresh blackberries
  • 1 nectarine, peeled and diced
Instructions:
  • Mix together almond milk, bananas, oats, water, chia seeds, and cinnamon in a jar or airtight container. Refrigerate covered for 8 hours to overnight.
  • In a saucepan, gently cook the oat mixture over low heat for approximately 5 minutes. Divide the cooked oats between 2 bowls and generously top with blueberries, blackberries, and nectarine slices.
