Vegan cinnamon rolls with dairy-free milk, butter, and egg replacer for a delicious breakfast treat.
Ingredients:
  • 1 cup almond milk
  • 0.33333334326744 cup vegan margarine (such as Earth Balance®)
  • 6 tablespoons water
  • 3 tablespoons dry egg replacer (such as Bob's Red Mill®)
  • 0.5 cup white sugar
  • 1 (.25 ounce) package active dry yeast
  • 3 cups unbleached or all-purpose flour, or as needed
  • 1 teaspoon kosher salt
  • 0.5 cup vegan margarine (such as Earth Balance®), melted
  • 0.75 cup white sugar
  • 0.5 teaspoon ground cinnamon, or to taste
  • 1 cup confectioners' sugar
  • 2 tablespoons water
  • 0.5 teaspoon vanilla extract
Instructions:
  • In a large microwave-safe bowl, mix almond milk and margarine for the dough. Microwave on high for 1 1/2 minutes.
  • In a bowl, whisk together water and egg replacer until fully combined. Allow the mixture to rest for 1 minute to achieve a thicker consistency.
  • While the warm milk mixture sits, gently combine sugar and yeast. Incorporate egg substitute, then add 3 cups of flour and salt. Use your hands to thoroughly mix. Gradually add more flour (up to 1 cup) and knead until the dough is no longer sticky. Cover the bowl with a towel and allow it to rest in a warm place for 1 hour.
  • After punching down the dough, gently roll it out on a lightly floured surface to create a 12x16-inch rectangle.
  • Brush the dough with melted margarine, generously sprinkle with sugar and cinnamon, and evenly spread the filling with a spoon. Roll the dough into a log starting at the long edge and cut into 12 rolls. (For larger rolls, roll from the short edge.) Arrange the rolls in a greased pan, cover with plastic wrap, and refrigerate for 8 hours up to overnight.
  • Take the rolls out of the refrigerator, uncover, and let them rest at room temperature for 30 to 60 minutes.
  • Preheat your oven to 375°F (190°C).
  • Bake rolls until they are beautifully golden brown, for approximately 30 minutes in the preheated oven.
  • Prepare a sweet vanilla glaze by combining confectioners' sugar, water, and vanilla in a bowl. Drizzle the warm rolls with the glaze before serving.
