Overnight vegan pancake batter for quick, family-friendly breakfast.
Ingredients:
  • 1.5 cups almond milk
  • 1.3333333730698 cups spelt flour
  • 2 tablespoons oil
  • 1 teaspoon baking powder
  • 1 tablespoon water, or more as needed
Instructions:
  • In a blender, combine milk, flour, oil, sugar, baking powder, vanilla extract, and salt. Blend briefly until mixed. Scrape the sides, then blend until smooth. Chill batter in the refrigerator for 8 hours to overnight.
  • Incorporate water into the batter until desired consistency is reached.
  • Preheat oven to the lowest setting and warm a plate inside.
  • Preheat a nonstick skillet over medium heat. Pour batter into the center of the ungreased skillet and cook until the pancake sets and turns golden brown, about 3 to 4 minutes. Flip and cook for an additional 1 to 2 minutes until browned on the other side. Keep warm in the oven and repeat the process with the rest of the batter.
