Indulgent breakfast chia pudding with Greek yogurt and Almond Breeze Almondmilk for a creamy and sweet twist.
Ingredients:
  • 1 cup Almond Breeze Unsweetened Vanilla Almondmilk
  • 1/2 cup plain Greek yogurt (I used 2%)
  • 1 1/2 tablespoons pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup chia seeds
  • 1 banana; sliced into thin slices
  • 1/2 cup chopped strawberries
  • 1/2 cup blueberries
  • 1/4 cup unsweetened coconut flakes; toasted
  • 2 tablespoons cacao nibs
Instructions:
  • Combine Almond Breeze Unsweetened Vanilla Almondmilk, Greek yogurt, maple syrup, and vanilla in a lidded container. Gently mix in chia seeds. Chill covered in the refrigerator for a minimum of 4 hours, preferably overnight.
  • When ready to enjoy the chia pudding, get your toppings ready. Toast coconut flakes in a preheated sauté pan over medium heat, stirring constantly until golden, for 1 to 3 minutes. Remove from the pan and let cool.
  • Mix chia seed pudding thoroughly to ensure a smooth texture, then divide evenly into 4 serving dishes. Garnish with sliced bananas, strawberries, blueberries, coconut flakes, and cacao nibs.
