Banana split with zesty passionfruit and crunchy almonds, perfect for a guilt-free treat!
Ingredients:
  • 40.00 ml flaked almonds
  • 6 passionfruit
  • 4 large ripe bananas, peeled
  • 8 scoops low-fat vanilla ice-cream
Instructions:
  • 1. In a small frying pan over medium heat, toast the almonds, stirring occasionally, for 2-3 minutes until lightly golden. Remove from the pan and transfer to a plate to cool.
  • Halve the passionfruit and gently scoop out the pulp using a small spoon into a bowl. Stir to crush the pulp slightly.
  • Halve the bananas lengthwise and arrange them in serving dishes. Top each banana half with 2 scoops of ice cream and garnish with passionfruit. Sprinkle almonds on top and serve promptly.
