Amaretto oranges with vanilla mascarpone

Elevate any meal with a simple and splendid orange dessert.
Ingredients:
  • 1 vanilla bean, split, seeds scraped
  • 250g mascarpone cheese
  • 125ml amaretto
  • 6 seedless oranges (such as navels), scrubbed
  • 275g caster sugar
Instructions:
  • Mix together fragrant vanilla seeds, rich mascarpone cheese, and a touch of luscious amaretto in a bowl. Refrigerate and let the flavors meld while you move on to prepping the oranges.
  • Trim the ends off the oranges and carefully peel the rind, ensuring no white pith is removed. Stack the rind strips in little piles of 4 and thinly slice lengthwise with a sharp knife. Set aside.
  • With precision, trim off and discard the white pith from the oranges. Slice each orange into 1cm-thick rounds, stack to reconstruct their original shape, and arrange beautifully on a large serving platter.
  • - Bring a small saucepan of water to a boil. Add the orange rind and simmer for 1 minute. Drain and repeat to remove bitterness. Set aside. - In another saucepan, combine sugar and 1/2 cup (125ml) water over low heat. Stir to dissolve sugar, then increase heat to medium-high and simmer until slightly syrupy, about 5 minutes. - Add the blanched orange zest and cook for 3 minutes, then stir in 1/2 cup (125ml) amaretto. Cool completely before using.
  • When ready to plate, take out the candied rind from the syrup and place it on top of the oranges. Drizzle the syrup over the dish and accompany with the vanilla mascarpone.
