Apricot Orange Syrup with Amaretto

Amaretto-infused golden apricot syrup, ideal for drizzling over waffles or pancakes.
Ingredients:
  • 0.75 pound very ripe fresh apricots, pitted and halved
  • 0.5 teaspoon vanilla extract
  • 0.5 cup orange juice
  • 1 tablespoon amaretto liqueur
  • 1 tablespoon water, if needed
  • 0.5 teaspoon cornstarch
  • 0.25 cup water
Instructions:
  • Combine apricots, sugar, vanilla extract, orange juice, and amaretto liqueur in a saucepan over medium heat. Stir until sugar dissolves, then bring to a boil. Cook and stir for about 5 minutes until apricots soften and release juice. Reduce heat to low and simmer for about 1 1/2 hours until apricots break down. Add 1 tablespoon of water if needed to adjust thickness or prevent burning.
  • Whisk cornstarch into 1/4 cup water until smooth, then add it to the apricot mixture. Boil, then simmer until it transforms into a luscious syrup, around 30 minutes.
