Eggless, quick and easy scones ready to savor in 35 minutes!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 3 tablespoons granulated sugar
  • 3 teaspoons baking powder
  • 2 teaspoons grated orange peel
  • 1/2 teaspoon salt
  • 1/2 cup chopped dried apricots
  • 1/2 cup white vanilla baking chips
  • 1 1/3 cups whipping cream
  • 1 cup powdered sugar
  • 2 to 3 tablespoons orange juice
Instructions:
  • - Preheat your oven to 400°F and lightly grease a cookie sheet. - In a large bowl, thoroughly combine flour, granulated sugar, baking powder, orange peel, and salt. - Gently fold in apricots and baking chips. - Add the whipping cream all at once and stir until the dry ingredients are just moistened.
  • On a lightly floured surface, gently knead the dough until smooth, about 6 or 7 times. Divide the dough in half and shape each half into a 6-inch round. Cut each round into 6 wedges and place them 2 inches apart on a cookie sheet.
  • Bake until light golden brown, around 10 to 13 minutes. Let cool for 5 minutes. In a small bowl, combine powdered sugar and orange juice to make icing. Drizzle over warm scones and serve immediately.
