Try these gluten-free, paleo almond flour pancakes for a delicious breakfast. Perfect with maple syrup and fresh fruit topping!
Ingredients:
  • 1 cup almond flour
  • 1 tablespoon chocolate chips (such as Enjoy Life®), or more to taste
  • 0.5 teaspoon baking soda
  • 1 pinch ground cinnamon, or to taste
  • 1 egg white
  • 1 tablespoon honey
  • 2 teaspoons vanilla extract
  • 0.25 cup water, or as needed
Instructions:
  • Heat a lightly oiled griddle until it reaches 375 degrees F (190 degrees C).
  • Combine almond flour, chocolate chips, baking soda, salt, and cinnamon in one bowl. In a separate bowl, mix egg, egg white, honey, and vanilla extract. Combine the two mixtures and stir, adding water as needed for a pancake batter consistency.
  • Using a large spoon, place batter onto the griddle and cook until pancakes are golden brown with dry edges, about 3-4 minutes. Flip and continue cooking until the other side is browned, about 2-3 minutes. Repeat with the rest of the batter.
