Amazing roast veg

Wood-fired oven roasts veggies to crispy perfection.
Ingredients:
  • 1 kg potatoes
  • 750 g carrots
  • 500 g beets
  • ½ a bunch of fresh rosemary (15g)
  • ½ a bulb of garlic
  • 1 tablespoon runny honey
  • good-quality balsamic vinegar
Instructions:
  • 1. Preheat the oven to 190°C/375°F/gas 5. 2. Boil three pans of salted water. 3. Peel the potatoes, carrots, and scrub the beets. Halve large potatoes, leave small ones whole. 4. Parboil potatoes for 5-10 minutes until half cooked. Drain and steam dry. 5. Shake potatoes in pan to chuff up edges. Steam carrots and beets. 6. Scatter rosemary over potatoes. Add garlic, olive oil, salt, pepper. Place in roasting tray. 7. Drizzle carrots and beets with olive oil, season with salt and pepper. Add garlic. Roast at 190°C for 20-30 minutes. 8. Drizzle honey over carrots, balsamic over beets. Return to oven until crispy and golden.
