Vegan oatmeal cookies: Crispy, soft, and delicious without dairy or eggs.
Ingredients:
  • 1 cup non-dairy margarine
  • 0.5 cup brown sugar
  • 0.5 cup confectioners' sugar
  • 0.5 cup lukewarm water
  • 2 tablespoons ground flax seeds
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups rolled oats
  • 0.25 cup shredded coconut
  • 2.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 cup vegan chocolate chips
  • 0.5 cup dried apricots, quartered
Instructions:
  • Preheat your oven to 375°F (190°C) to ensure the perfect cooking temperature.
  • In a large bowl, blend margarine, brown sugar, and confectioners' sugar until creamy using an electric mixer. Stir in water, flax seeds, and vanilla extract. Add flour and baking powder, then gently mix in oats, coconut, cinnamon, cloves, chocolate chips, and apricots.
  • Roll the dough into small balls and place them on baking sheets. Gently press down on each one with the palm of your hand to slightly flatten.
  • Bake until edges are golden, for approximately 15 minutes in the preheated oven.
