Indulge in a luscious vegan pumpkin pie featuring fresh pumpkin, creamy coconut milk, and cozy fall spices - a delectable Thanksgiving treat for all to enjoy.
Ingredients:
  • 1 (3 pound) pie pumpkin, halved and seeded
  • cooking spray
  • 1.5 cups white sugar
  • 1.5 cups unsweetened applesauce
  • 1 (14 ounce) can coconut milk
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 3 unbaked pie shells
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Coat the sliced pumpkin with cooking spray and place it cut-side down on a baking sheet with a rim.
  • Roast in the oven until fork-tender, approximately 1 hour. Allow to cool for about 20 minutes.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Transfer the cooked pumpkin to a bowl then combine with sugar, applesauce, coconut milk, cinnamon, ginger, allspice, nutmeg, salt, and ground cloves. Mix until smooth using an electric mixer.
  • Evenly distribute the pumpkin mixture into the pie shells.
  • 1. Bake in a preheated oven until edges are golden, about 10 minutes. Then lower the oven temperature to 350°F (175°C) and bake for an additional 45-50 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack for at least 1 hour before serving.
