Andes® chocolate mint-filled butter cookies - perfect for Christmas festivities!
Ingredients:
  • 1 cup butter
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 3 cups all-purpose flour
  • 0.5 teaspoon salt
  • 65 chocolate-mint layer candies (such as Andes®), unwrapped, divided
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease 2 baking sheets.
  • In a bowl, cream together butter, white sugar, and brown sugar until smooth and creamy. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  • Combine flour, baking powder, and salt in a bowl, whisking them together. Slowly incorporate the flour mixture into the butter mixture until the dough just comes together. Place the dough in a resealable plastic bag, remove any excess air, and seal the bag. Refrigerate until the dough is firm, for at least 2 hours.
  • Divide the dough into 42 portions, wrap each portion around a mint, and place them 2 inches apart on the baking sheets.
  • Bake until the cookie edges turn golden, about 10 to 12 minutes in the preheated oven.
  • Melt the rest of the chocolate mint candies in the microwave-safe glass or ceramic bowl in 30-second intervals, stirring each time, for 1 to 3 minutes. Drizzle the melted mint chocolate over the cookies.
