Double the minty goodness with Andes mints and Girl Scout thin mints in these irresistible Thin Mint Muddy Buddies.
Ingredients:
  • 3/4 cups finely crushed thin mint cookies
  • 2 tablespoons chopped Andes mints
  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1/4 teaspoon mint extract
  • 6 cups crispy cereal squares, such as Chex™ cereal
  • 3/4 cups confectioner’s sugar
Instructions:
  • Blend thin mint cookies in a blender or food processor until you have 3/4 cup crumbs. Crush Andes mints and set aside.
  • Combine semisweet chocolate chips, butter, and mint extract in a microwave-safe bowl. Microwave for 1 minute, stirring after. Heat in 15-second intervals, stirring until mixture is smooth.
  • Place cereal in a spacious bowl. Drizzle melted mint chocolate over the cereal and mix until well coated. Transfer the chocolate-coated cereal to a large resealable bag and add confectioner’s sugar and crushed thin mint cookies. Shake vigorously until the cereal is evenly coated.
  • Spread the cereal mixture on a baking pan and generously sprinkle with chopped Andes mints. Cool and set the mixture before transferring to an airtight container for storage.
