Indulgent mint-chocolate treats made with buttery Ritz crackers, bittersweet chocolate, and refreshing peppermint extract.
Ingredients:
  • 1 pound bittersweet chocolate, broken into small pieces
  • 80 buttery round crackers (such as Ritz®)
  • 0.5 teaspoon peppermint extract
Instructions:
  • Melt the chocolate in a double boiler over gently simmering water, stirring often and scraping the sides with a rubber spatula, for 15 to 20 minutes. Be careful not to let any water come in contact with the chocolate.
  • As the chocolate melts, prepare two baking sheets by lining them with parchment paper and placing them in the freezer to chill.
  • Take the melted chocolate off the stove and gently fold in the peppermint extract.
  • Dip crackers in melted chocolate, then place on prepared baking sheets. Chill in the refrigerator until chocolate sets, approximately 5 minutes.
  • If desired, place cookies in candy cups. Keep at room temperature or in a cool, dry place away from any odors.
