Decadent Thin Mint(R) inspired truffles made with brownie mix. Perfect for entertaining, simple to make, and budget-friendly.
Ingredients:
  • cooking spray
  • 1 (18.4 ounce) package brownie mix
  • 0.66666668653488 cup vegetable oil
  • 0.25 cup water
  • 2 large eggs
  • 1 (4.6 ounce) package creme de menthe thins (such as Andes®)
  • 1 (12 ounce) bag semisweet chocolate chips
  • 1 tablespoon coconut oil
  • green and while candy sprinkles (optional)
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch glass pan with cooking spray.
  • In a large bowl, mix together brownie mix, oil, water, and eggs until just combined. Transfer the batter into the prepared pan and spread evenly.
  • Bake at the set temperature until a toothpick inserted in the middle comes out clean, for around 28 to 31 minutes. Then, take it out and let it cool for about 10 minutes.
  • In a large bowl, crumble warm brownies. Coarsely chop mint thins and fold them in. Stir until fully mixed, letting the warmth of the brownies melt the chocolate slightly.
  • Shape mixture into compact 1 1/2-inch balls, then refrigerate for 20 minutes.
  • In a small microwave-safe bowl, melt chocolate chips with oil in 30-second intervals, stirring until smooth.
  • Coat each brownie ball in the luscious melted chocolate using a fork, allowing any extra to drip off. Then, lay the dipped truffles on a tray lined with waxed or parchment paper. For added flair, sprinkle with your favorite toppings.
  • Chill for 5 minutes until the chocolate has hardened, or leave out at room temperature for 20 minutes.
