Ingredients:
  • 250g pkt Arnott’s Salada Original crackers
  • 225g pkt dark chocolate melts
  • 225g pkt milk chocolate melts
  • 20g copha
  • 300g (2 cups) icing sugar
  • 40.00 ml melted copha
  • 6 drops peppermint essence
Instructions:
  • Mix together the icing sugar, milk, copha, and peppermint essence in a bowl to create the peppermint filling.
  • Prepare a baking tray by lining it with parchment paper. Use a palette knife to evenly spread 2-3 teaspoons of filling on each cracker, ensuring it reaches the edges. Transfer the crackers to the prepared tray. Chill in the fridge for 1 hour or until the filling is set.
  • Combine the dark and milk chocolate melts with copha in a microwave-safe bowl. Microwave on Medium heat, stirring every 30 seconds, until melted and smooth.
  • Take each cracker and dip it in the chocolate with the peppermint side facing down. Use a pallet knife to swipe off any extra chocolate. Arrange them on a wire rack. After the rack is full, lightly tap it on the counter to even out the chocolate and remove any excess. Refrigerate for 1-2 hours until firm. Break each biscuit into quarters or cut into squares before serving.
