Make quick after-dinner mint filo fingers for an easy dessert.
Ingredients:
  • 8 sheets filo pastry
  • 4 x 40g bars Aero Peppermint, halved lengthways
  • 80g butter, chopped, melted
  • 62.50 ml bb's Chocolate Mint Balls, chopped
Instructions:
  • Preheat your oven to 180C (160C fan forced) and line a baking tray with parchment paper. Then, cut the filo sheets in half crosswise.
  • Place one piece of Aero Peppermint at the end of a piece of filo pastry. Brush the filo with melted butter. Fold in the sides and roll up to enclose the Aero bar. Repeat the process with another piece of filo to create a double layer. Place the filled filo roll, seam side down, on the prepared tray. Repeat with the remaining filo and Aero bars to make a total of 8 filo fingers.
  • 1. Coat the filo fingers generously with melted butter. Bake in the oven for 15-20 minutes or until they turn a beautiful golden color. Let them cool for a bit, then serve them with a luscious drizzle of melted chocolate and a sprinkle of chopped bb’s and Peppermint Crisp.
