Impress your guests with a crowd-pleasing antipasto pasta salad, a flavorful medley of pasta, meats, and cheeses that is simple to whip up and ideal for any gathering.
Ingredients:
  • 1 pound seashell pasta
  • 0.5 pound Asiago cheese, diced
  • 0.25 pound Genoa salami, chopped
  • 0.25 pound pepperoni sausage, chopped
  • 3 medium tomatoes, chopped
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, chopped
  • 1 (6 ounce) can black olives, drained and chopped
  • 1 (.7 ounce) package dry Italian-style salad dressing mix
  • 0.75 cup extra virgin olive oil
  • 0.25 cup balsamic vinegar
  • 2 tablespoons dried oregano
  • 1 tablespoon dried parsley
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Prepare the salad by boiling a large pot of salted water. Cook the shell pasta until perfectly tender yet slightly firm, approximately 9 minutes. Drain the pasta, then rinse it under cold water to cool, and drain once more.
  • Combine the drained pasta with Asiago cheese, salami, pepperoni, tomatoes, bell peppers, and olives in a large bowl. Sprinkle the dry dressing mix over the top and mix everything together until well combined. Chill in the refrigerator for a minimum of 1 hour before serving.
  • Prepare the flavorful dressing by whisking together oil, vinegar, oregano, parsley, Parmesan, salt, and pepper in a small bowl. Cover and set aside until serving time.
  • Drizzle the dressing over the cold salad and toss until fully coated.
