Impress guests with a gourmet vegetarian antipasto platter for a lively party atmosphere.
Ingredients:
150g feta
1loafcrusty Italian-style bread
60ml (1/4 cup) olive oil
1garlicclove, peeled
150g marinated chargrilled capsicum, drained, cut into strips
40.00 ml toastedpine nuts (Duck's brand)
200g bought hummus
1 x 280g cansundried tomato & feta dolmades
180g marinated mushrooms, drained
150g marinated mixed olives, drained
4marinated artichokes, quartered
Instructions:
Preheat your oven to 220°C. Cut the bread into 3 equal portions, then slice each portion diagonally to create triangle-shaped pieces.
Coat bread evenly with 2 tablespoons of oil and arrange on a baking tray. Bake in a preheated oven for 6-8 minutes until golden brown and hot. Take out of the oven and gently swipe bread with a garlic clove for extra flavor.
Mix together capsicum, feta, rocket, and pine nuts in a medium bowl. Drizzle hummus with remaining olive oil. Arrange bread, dolmades, mushrooms, olives, and artichokes on a serving platter. Serve immediately with hummus and capsicum salad.
