Antipasto Tortellini and Tomato Salad

Create a delicious pasta salad in under 30 minutes for a quick and satisfying dinner.
Ingredients:
  • 1 package (9 oz) refrigerated cheese-filled tortellini
  • 1 cup drained Giardiniera vegetable mix (from 12-oz jar)
  • 1 can (15 oz) Progresso™ dark red kidney beans, drained, rinsed
  • 3 plum (Roma) tomatoes, coarsely chopped (1 cup)
  • 4 medium green onions, sliced (1/4 cup)
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup balsamic vinaigrette dressing
Instructions:
  • Prepare the tortellini according to package instructions. Once cooked, rinse under cold water and drain well.
  • Cut large pieces of Giardiniera vegetable mix. In a big bowl, combine tortellini, vegetable mix, and all remaining ingredients except dressing. Drizzle dressing over the mixture and toss well to coat. Enjoy right away or chill for up to 2 hours before serving.
