Antipasto with grissini

Serve a customizable deli platter with Italian breadsticks for your guests to enjoy.
Ingredients:
  • 2 green zucchini, thinly sliced lengthways
  • 4.60 gm olive oil
  • 100g marinated whole green olives
  • 180g bought marinated chargrilled capsicum, drained well on paper towel
  • 200g drained artichoke hearts, quartered
  • 1 x 275g jar marinated mushrooms (Always Fresh brand)
  • 8 thin slices (about 100g) prosciutto, halved lengthways
  • 16 small sesame grissini
  • 6 fresh basil leaves
Instructions:
  • Preheat the grill to high. Lay out zucchini slices on a baking tray and generously brush with oil. Grill them about 6cm from the heat for 3-4 minutes on each side until golden brown. Take them off the heat and let them cool for 5 minutes before serving.
  • Assemble the zucchini, olives, capsicum, artichoke, and mushrooms on a serving platter. Wrap the grissini with prosciutto slices and position them on the platter. Garnish the mushrooms with basil leaves.
