Antipasto with feta

Create a flavorful Turkish bread snack with creamy feta and fresh veggies.
Ingredients:
  • 1 x 430g Turkish bread, cut crossways, halved
  • 2 x 310g jars grilled eggplant, drained, chopped
  • 340g jar artichokes, drained, chopped
  • 100g semi-dried tomato
  • 2 tsp baby capers, rinsed, drained
  • 200g feta, crumbled
Instructions:
  • Preheat the grill to high heat, then grill the cut side of the bread for 2 minutes, or until beautifully browned.
  • Combine the eggplant, artichokes, tomatoes, and capers in a bowl.
  • Place the flavorful eggplant mixture on top of the toasted bread. Sprinkle generously with feta cheese. Grill for 3 minutes, or until the feta turns a beautiful light golden color.
