Delicious vegetarian lunchbox with antipasto flavors and creamy feta cheese.
Ingredients:
  • 75g baby rocket
  • 99.00 gm basil pesto
  • 4 sheets mountain bread (see note)
  • 187.50 ml chopped marinated eggplant
  • 1/2 cup chopped marinated mushrooms
  • 125.00 ml chopped marinated artichoke hearts
  • 125.00 ml chopped semi-dried tomatoes
  • 100g feta, crumbled
Instructions:
  • Spread a generous layer of flavorful pesto onto the bread sheets. Line up fresh rocket leaves neatly along one edge of each sheet. Layer on the savory eggplant, mushrooms, artichoke, and tomatoes. Finish off with a sprinkle of tangy feta over the colorful vegetables.
  • Roll tightly to envelop the filling, tie with kitchen string, cut in half, and enjoy.
