Grilled chicken, veggies, and creamy mayo in a French roll. Delicious layers!
Ingredients:
  • 81.68 gm whole-egg mayonnaise
  • 200g chargrilled eggplant, sliced
  • 100g semi-dried tomatoes, chopped
  • 150g chargrilled peppers, chopped
  • 1 barbecued chicken
  • 2 French sticks
  • 1 handful rocket
  • Extra mayonnaise, to serve (optional)
Instructions:
  • Remove all the meat from the chicken and shred it.
  • Cut the French sticks along the center, leaving them slightly open. Spread mayonnaise on each piece. Fill with shredded chicken, rocket leaves, eggplant, semi-dried tomatoes, and peppers. Cut into 4 pieces each. Serve rolls with extra mayonnaise on the side if desired.
