Anzac biscuit tarts

Elevate Anzac biscuits into a luxurious dessert sure to impress all your guests!
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • 55g (1/2 cup) almond meal
  • 45g (1/4 cup) icing sugar mixture
  • 150g chilled butter, chopped
  • 300ml thin cream
  • 1 tsp vanilla bean paste
  • 1 egg, lightly whisked
  • 2 egg yolks, extra
  • 55g (1/4 cup) caster sugar
  • 8 Anzac biscuits, coarsely broken
  • 10.00 gm rolled oats
  • 20g butter
  • 16.00 gm brown sugar
  • Vanilla ice-cream, to serve
Instructions:
  • Combine flour, almond meal, icing sugar, and butter in a food processor until it forms fine breadcrumbs. Then, add the egg yolk and process until the dough comes together.
  • Transfer the dough to a gently dusted surface and knead until smooth. Form into a disc, wrap with plastic, and chill in the fridge for 30 minutes.
  • Preheat the oven to 200°C. Divide the pastry into 4 equal portions. Roll out each portion on a lightly floured surface to a 3mm-thick disc. Line four round 3cm-deep, 8cm fluted tart tins with removable bases with the pastry, trimming any excess. Chill in the fridge for 15 minutes before using.
  • Line the pastry bases with baking paper and use pastry weights, rice, or dried beans for baking. Bake for 8-10 minutes. Remove the paper and weights, then bake for another 8-10 minutes until golden. Take out of the oven and lower the temperature to 160°C.
  • Combine cream and rich vanilla bean paste in a saucepan over gentle heat, letting it come to a simmer. Remove from heat. In a bowl, whisk together egg, extra yolks, and sugar until combined. Slowly pour and whisk in the hot cream mixture until smooth. Divide the mixture evenly among pastry cases and bake in the oven for 15 minutes or until nearly set.
  • Combine biscuit, oats, butter, and brown sugar in a food processor until it forms coarse breadcrumbs. Sprinkle mixture over tarts. Bake for 10 minutes until golden brown. Let cool for 15 minutes. Enjoy warm or chilled with ice cream.
