Aperol transforms into a delightful dessert in this Italian-inspired recipe by Valli Little.
Ingredients:
  • 6 titanium-strength gelatine leaves
  • 150g caster sugar
  • 750ml bottle prosecco
  • 100ml fresh orange juice
  • 125ml aperol
  • Whipped cream, to serve
  • Fresh orange segments, to serve
  • Blanched finely pared orange zest, to serve
Instructions:
  • Soak the gelatine in cold water for 5 minutes to soften.
  • Combine the sugar, prosecco, and orange juice in a saucepan over medium heat. Heat gently while stirring until the sugar is dissolved.
  • Drain the gelatin well before incorporating it into the orange juice mixture, stirring until completely dissolved. Let it cool for 10 minutes. Sieve the mixture into a clean bowl, then mix in the Aperol. Divide into 4 glasses and refrigerate until set, about 4 hours.
  • Garnish with whipped cream, fresh orange segments, and a sprinkle of orange zest.
