Delectable Italian Aperol Spritz slice with biscuit and creamy mascarpone layers topped with refreshing jelly.
Ingredients:
  • 250g pkt plain sweet biscuits
  • 125g unsalted butter, melted
  • 9.00 gm gelatine powder
  • 250g mascarpone, at room temperature
  • 300ml thickened cream, at room temperature
  • 4.40 gm vanilla extract
  • 100g (1/2 cup) caster sugar
  • Thinly sliced orange, to serve
  • 250ml (1 cup) prosecco
  • 40.00 gm caster sugar
  • 125ml (1/2 cup) Aperol Aperitivo
  • 6.00 gm gelatine powder
Instructions:
  • Prepare a 16 x 26cm slice pan by greasing it and lining it with baking paper, making sure to let the paper hang over the 2 long sides.
  • Crush the biscuits in a food processor until coarse. Mix in butter until combined. Press the mixture firmly onto the pan base using the bottom of a glass. Chill in the fridge for 30 minutes covered with plastic wrap.
  • In a small heatproof bowl, pour 60ml (1/4 cup) water and sprinkle gelatine on top. Let it soften for 2-3 minutes. Microwave for 10 seconds until warm. Whisk with a fork until gelatine dissolves. Allow to cool.
  • With an electric beater, combine mascarpone, cream, vanilla, and sugar until just mixed (be cautious not to overbeat). Mix in the gelatine. Spread the mascarpone mixture over the biscuit base, leaving about 1 cm of space at the top for the jelly layer. Any extra mixture can be refrigerated in a ramekin. Chill in the fridge for 2 hours or until set.
  • For jelly, mix prosecco and sugar in a saucepan. Cook over medium-low heat for 1 minute until sugar dissolves. Take off heat, add Aperol, and let cool. In a bowl, combine water and gelatine, microwave for 10 seconds, whisk until dissolved. Stir gelatine mix into Aperol mix.
  • Refrigerate the slice and gently pour the Aperol mixture over it. Let it chill for 4 hours or overnight until the jelly sets.
  • Lift the slice with the overhanging paper and transfer it to a chopping board. Cut into squares and garnish with orange slices before serving.
