Vibrant radicchio and tart green apples make a refreshing salad.
Ingredients:
  • 50g (1/2 cup) walnuts
  • 23.40 gm Dijon mustard
  • 30.00 ml white wine vinegar
  • 80ml (1/3 cup) extra virgin olive oil
  • 2 radicchio, trimmed, finely shredded
  • 2 granny smith apples, quartered, cored, thinly sliced
  • 2 spring onions, thinly sliced
Instructions:
  • Preheat the oven to 180C. Spread walnuts on a baking sheet and bake for about 5 minutes until golden brown.
  • In a small bowl, combine mustard and vinegar, season with salt and pepper, and whisk together. Slowly whisk in oil until smooth.
  • Combine radicchio, apples, onions, and walnuts in a large bowl. Drizzle with dressing and toss gently to coat evenly.
