Sticky apple, walnut and maple monkey bread

Indulge in maple caramel soaked cinnamon apple monkey bread for a decadent treat.
Ingredients:
  • 485g plain flour
  • 75g caster sugar
  • 1 sachet (7g/2 tsp) dried yeast
  • 1.20 gm salt
  • 100g butter, softened
  • 1 Free Range Egg
  • 250ml milk
  • 220g brown sugar
  • 100g butter, extra, melted
  • 5.00 gm ground cinnamon
  • 55g walnut
  • 1 Granny Smith apple, peeled, cored, finely chopped
  • 125ml brown sugar
  • 125ml maple syrup
  • 100g butter, chopped
Instructions:
  • In a large bowl, mix together the flour, caster sugar, yeast, and salt. Add the butter and use your fingertips to blend it into the mixture until it resembles breadcrumbs. In a separate jug, whisk the egg and milk together, then pour into the flour mixture and stir well. Transfer the dough onto a lightly floured surface and knead for 10 minutes until smooth and stretchy. Place the dough in a greased bowl, cover it, and let it sit for 1 hour to rise.
  • Combine 3/4 cup (165g) brown sugar in a small bowl with extra butter and cinnamon, stirring until well mixed.
  • - Preheat your oven to 180C. - Grease a 25cm ring or bundt pan. - Sprinkle with half of the walnuts.
  • Flatten the dough, then knead it on a floured surface until smooth. Divide into 3 parts. Roll one portion into a 20cm x 30cm rectangle. Spread one-third of the cinnamon mixture and a quarter of the chopped apple evenly. Roll up from one long edge, then cut into 12 pieces.
  • Continue the delicious process by using the rest of the dough, the rest of the cinnamon mixture, and two-thirds of the remaining apple. Place 12 of the pieces, cut-side down, on the pan. Sprinkle with half of the leftover walnuts and sugar, plus the remaining apple. Add in half of the remaining pieces, cut-side out, along with the rest of the walnuts and sugar. Finish off with the remaining 12 pieces, cut-side down. Let it sit and rise for 15 minutes. Enjoy the anticipation of what's to come!
  • Bake for 40-45 minutes until golden brown and fully cooked. Allow to cool in the pan for 5 minutes before transferring to a serving plate.
  • In a saucepan over medium heat, stir together sugar, maple syrup, butter, and cream. Cook for 5 minutes until the sauce boils and thickens into a luscious maple caramel sauce.
  • Drizzle half of the warm maple caramel sauce over the freshly baked monkey bread. Serve it warm or at room temperature and provide extra maple caramel sauce on the side.
