Apple tarte tatin

One-pan sticky apple tart with only 6 ingredients - unbelievably easy!
Ingredients:
  • 4 small Granny Smith apples, peeled, cored, halved
  • 1 tsp vanilla bean paste
  • 75g caster sugar
  • 40g butter, chopped
  • 2 sheets frozen puff pastry
  • Créme fraîche, to serve
Instructions:
  • Preheat your oven to 200°C, then mix together the apple, lemon juice, and vanilla in a medium bowl.
  • In a 18cm ovenproof frying pan over high heat, melt the sugar until golden brown while stirring occasionally with a wooden spoon for about 5 minutes. Remove from heat, swirl in the butter, then arrange the apple cut-side up on top, drizzling with any remaining juices from the bowl.
  • Lay one pastry sheet on a clean work surface, then place the second sheet on top to create a stack. Cut a 25cm disc using a plate as a guide. Place the pastry over the apple in the pan and neatly tuck the edges into the side of the pan using a spoon.
  • Bake until the pastry is fluffy and golden brown, about 20-25 mins. Let it rest for 2 mins. Invert the tart onto a serving plate and cut into wedges. Serve right away with créme fraîche.
