Upside-down pineapple tarts

Create a modern apple tarte tatin with only five ingredients.
Ingredients:
  • 600g pineapple, peeled, cored, coarsely chopped
  • 80g (1/2 cup) brown sugar, lightly packed
  • 20g chilled unsalted butter, chopped
  • 2 sheets frozen puff pastry, thawed
  • Double cream or vanilla ice-cream, to serve
Instructions:
  • In a non-stick frying pan over medium-high heat, caramelize pineapple for 3 minutes. Add sugar and butter, cook for another 3 minutes until syrupy, stirring occasionally.
  • Distribute the pineapple and syrup evenly among four 10cm ceramic fluted pie dishes. Let them sit for 10 minutes to cool down a bit.
  • - Preheat the oven to 180°C. - Cut out four 13cm discs from the pastry and lay them over the pineapple, pleating and folding the edges. - Transfer to a baking tray and bake for 15-20 minutes until the pastry turns golden. - Flip it onto plates and enjoy with a side of cream or ice-cream.
