Try this whimsical upside-down cake for a deliciously unexpected twist.
Ingredients:
  • 20g reduced-fat margarine spread
  • 42.00 gm unsweetened apple juice
  • 2 large pink lady apples, cored, cut into 4mm-thick rounds
  • 1 sheet frozen ready-rolled reduced-fat puff pastry, partially thawed
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced).
  • In a 20cm (base) ovenproof frying pan heated over medium heat, combine spread, sugar, and apple juice. Stir and cook for 3 to 4 minutes until sugar dissolves. Let it boil and cook for another minute until thickened, then remove from heat.
  • Neatly layer apple slices in pan, slightly overlapping. Cover with pastry, ensuring edges are tucked in. Bake until pastry is golden and puffed, about 30 minutes. Let it rest in the pan for 5 minutes, then carefully invert onto a plate. Enjoy!
