Spiced apple frangipane tart

Sweet and spicy spiced apple frangipane tart.
Ingredients:
  • 250g packet Butternut Snap cookies
  • 20.00 gm almond meal (ground almonds)
  • 1 medium gala apple, cored, thinly sliced
  • 40.00 gm caster sugar
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground star anise
  • Double cream, to serve
  • 125g butter, softened
  • 141.90 gm caster sugar
  • 82.50 ml plain flour
  • 100.00 gm almond meal (ground almonds)
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 3cm-deep, 24cm round fluted flan tin with a loose base.
  • Pulse biscuits until they turn into fine breadcrumbs. Add egg and almond meal. Blend until mixture forms a dough. Press mixture onto the base and sides of the tin using your fingertips. Chill in the fridge for 20 minutes. Place tin on a baking tray and bake for 10 minutes or until lightly cooked. Allow to cool before serving.
  • Prepare frangipane mixture by creaming butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time, mixing well after each addition. Gently fold in flour and almond meal. Spread the frangipane mixture over the biscuit base, then layer the sliced apples on top. Dust the apples with a mixture of sugar, cinnamon, and star anise. Bake for 30 to 35 minutes until the frangipane is set. Allow to cool completely in the pan, slice, and serve with cream.
